• Whiskey Sour : 3 S's elaboration rule, classical version (Pure Cane Sugar) or flavored (White Peach, Passion, Vanilla...), dry shake/reverse dry shake technique to obtain a perfect foam, double strain, decoration on the cocktail foam.
• Mint Julep The official Kentucky Derby Cocktail, served in a julep cup, prepared with crushed ice (nuggets ice ideally) with Pure Cane Sugar or flavored version with syrup Amaretto, Lemongrass, Morello cherry...
• Old Fashioned the number one cocktail in the USA, made directly in a glass or mixing glass, classic with white cane sugar/oux/Muscovado or flavored version possible (Popcorn, Salted Caramel, Gingerbread...), declination with rum possible
